Because you can't even dodge their attacks no matter how hard you try. Killing Volatiles with ranged weapons, particularly shotguns and explosives, isn't all that hard, but melee fighting a Volatile is just stupid. If you absolutely want to kill a Volatile with melee, your best bet is to have a very strong weapon, and tank all of the hits while hitting the Volatile, and hope it dies before you do. What often ends up happening is, even if you Matrix the hell out of the fight and dodge every attack, you will still get hit as their tackle and jump attack hitboxes are horribly broken and will often hit you even if you appear to have dodged the attack. However, trying to fight a Volatile head on with a melee weapon is very unpleasant. And there is a picture on the store page of 2 players fighting Volatiles. The game seems to encourage you to run from them, but despite that, there is an achievement for killing a Volatile, and some bounties for doing it too.
